Sometimes, it can be a small world in the travel and tourism industry.

On May 22nd, we attended an online webinar about “Unpacking Sustainable Tourism Certifications” by Weeva, where Akis Christodoulou, ESG & Sustainability Supervisor at Casale Panayiotis, the first Global Sustainable Tourism Council (GSTC) certified hotel in Cyprus, was introduced.

We were immediately intrigued and inspired by Akis’ story. Coincidentally, our Founder Sophia Polson was set to travel to Cyprus two weeks later to visit her family (fun fact: for those who don’t know, Sophia’s family are Greek Cypriot).

We knew we had to contact Akis to arrange a tour after learning of their latest achievement, and we’re so glad we did.

He invited us to stay at the hotel where we were given an exclusive back-of- house tour to learn more about the hard work that went into achieving this incredible milestone.

We discussed the benefits of certification for hotels and how it has helped with increased bookings from environmentally conscious guests, the importance of data collection for measuring progress and the challenges in implementing sustainability practices, such as finding local suppliers with green certifications.

What does sustainability look like at Casaele Panayiotis? Here are some of my highlights:

  • 🌱 Organic composting machine that processes food waste, producing compost for their on-site orchard and reducing waste by 70%.
  • 🌱 Traditional workshops available to guests, including beekeeping and halloumi cheese making, inspired by the local village lifestyle.
  • 🌱 Reduction of single-use plastic by providing guests with reusable water bottles and replacing plastic water bottles with clay carafes in the restaurants.
  • 🌱 Food sourced locally from the hotel’s orchard, creating a sustainable closed-loop system for the restaurant.
  • 🌱 Tours are available to the hotel’s winery for guests to taste and enjoy local wines.
  • 🌱 Supports the local village economy through tourism and donations to community programs.
  • 🌱 Pet-friendly hotel where donations are made from pet fees to local dog shelters to support animal welfare.

For now here are a few photographs we took from our stay to ease your curiosity, featuring a photo of Akis generously gifting Sophia a jar of their organic compost, (which her grandparents greatly appreciated for their garden and vegetable farm).



The homemade lemonade was delicious and welcomed in the nearly 40 degrees heat we experienced during our visit!

We look forward to visiting again when we next visit Cyprus and would encourage anyone else to see and experience it for themselves
